The greatest state of all UTAH! Part 1

We had the best vacation ever! We spent about a week and a half in Utah and it was a blast. Izzy had fall break so it was the perfect time to head home.

I went a couple of days earlier than Andy and Izzy (I flew standby = worst idea ever)

Fist stop ye old stomping ground THE CANYONS one of my very best friends flew in to UT the same time so I could see her and meet her beautiful new baby Eloise we had a fun day relaxing and visiting with some of our friends.

Friday night Nichole hosted a girls night and it was a full on roommate reunion
Caroline, Suzette, Mel, Nic, Jen and I laughed and chatted for hours it was perfect and I forgot my camera

Next stop I got to pick up Andy and Iz from the airport, after their delayed/missed flight arrival I headed straight to the Utah game to cheer on the UTES

After the game we headed up to Park City and had dinner with Jim and the boys and did a little shopping at the outlets

The next morning we had breakfast at the hotel in SL and got ready to go to Logan to see the family

oh we also stopped at build a bear meet Charlotte and Jennifer

We celebrated our anniversary... yep its been a year :)

Andy picked out my beautiful sapphire himself. I LOVE it!

I also got a really cool necklace from HERE remember we did get married on a baseball field

I am one lucky girl. Andy surprised me on my birthday with a fun filled day.

We started off kayaking

then we went ziplining

We even ziplined into a pond...

There was even a little hiking involved :)

We also had had a BBQ with some of our friends

It was a wonderful day! Andy did such a good job at surprising me with lots of activities, friends and of course presents! I love birthdays!

Secret Beach is about a mile past Mahaulepu you can only get there by foot. It is amazing, very secluded we were actually the only ones there on Friday

Today is my most favorite little girls birthday. So I will be traditional and list six reasons why Izzy is SO awesome!

1. Izzy is SO funny she can make anyone and everyone laugh!
2. She needs her sleep! She needs anywhere from 10 to 12 hours of sleep a night or else...
3. Her toys come to life. It's amazing she has the best imagination ever!
4. She is SO charming. She has her dad and her Hawaiian mama wrapped around her finger.
5. Isabelle is SMART, I think she is too smart she also has a really really good memory. Watch out :)
6. She loves animals. Her dog Kevin means the world to her. She has a very tender heart and loves all animals.

In the summer time the swell is up on the south shore (where we live) and da norte chore (the north shore) is like a huge lake. It is AWESOME!

If you get the chance watch Soul Surfer the movie was filmed and actually took place in Kauai and most of the movie was filmed at Hanalei Bay...

Barking Sands is AMAZING it is all sand no rocks. It is on the West side of Kauai part Pacific Missile Range Facility so you have to have a pass to get on. The West side is dry, which is wonderful! I love dry heat.

Andy and I went Mountian Tubing down an old sugar cane crop irrigation tunnels. I have heard that this is a must do while we live here and it was three hours of pure fun!

A travel story
I would have to say I have pretty good luck traveling. No missed flights, no missing luggage, no plane issues etc... I push my luck getting to the airport on time and there have been a couple of times that I have had to run to my gate but nothing thrilling.
My favoirte trip was in September 2009 Andy and I flew to AZ to spend an extra long weekend with Isabelle. We stayed at my favorite hotel The Westin Kierland.

A favorite recipe:
I thought this would be hard because I am not a cook, but I do love to bake and this is my latest favorite red velvet cupcakes Paula Deen style.

Ingredients
2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
Chopped pecans and fresh raspberries or strawberries, for garnish
Directions
Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.

In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.

For the Cream Cheese Frosting:

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Garnish with chopped pecans and a fresh raspberry or strawberry.

Cook's Note: Frost the cupcakes with a butter knife or pipe it on with a big star tip.

Andy and I ran our first 5K conquer the canyon in Smithfield Canyon it was so cold and I had only ran inside so it was a little brutal with the elevation and the freezing temperature

We use to all live together and now Jen (who was married at this time last year) has a beautiful new baby girl Eloise or Ella for short. Nichole Hatch soon to be Nichole Miskin is getting married in a couple of weeks. And for me I got married to my most favorite person in the world! I love to reminisce and I love old photos :)

And this is me exactly one year later. I ran a 5K for Charity Walk, I assumed it was a walk so I didn’t prepare myself to run but it was fun and really easy to run at sea level when its 80 degrees out.

We celebrated Andy's big day all week. One of his favorite things to do is go out to eat. The first night we went to Roy's it was good... average nothing over the top but we had a nice relaxing dinner.

The second night we had pupus at Casablanca then went to Plantation Gardens and met up with some new friends.

I love you Andy and I look forward to spending the next 100 birthdays with you!

Island fever...

Urban Dictionary:
1. Island Fever

Island Fever is the realization that you are stuck on which ever island you are living and not going anywhere.

Sure, you can take a plane to Asia, United States and Europe if you have the money to pay for it. Most beach bums do not have it so they are stuck on Oahu.

Sure you can take a plane to Maui, Lanai, etc... But getting the money (around $150 RT) is also a problem too. Besides, don't forget SSDI... Same Sh*t, Different Island.
People who live on mainland have trouble understanding Island Fever because they can hop on a cheap bus or train and travel to many different countries. While people in Oahu are stuck on a rock the size of Chicago.

Don’t get me wrong, I love Hawaii the weather, the ocean, the weather.... and did I mention that is 83* almost every day. But it isn’t easy living on an Island in the middle of the Pacific. Everyone has told me that the first six months are the hardest; man I sure hope they are right. Our six month anniversary will be spent in Arizona my first trip back to the mainland. Oh I have never been this excited to go to Phoenix Arizona!

I want to take note of a few reasons I dont love Kauai... there are only a few
*It's illegal to talk and drive thank you Kauai County for my $97 ticket
*The bank still uses a type writer
*FOOD... it is SO expensive example a head of lettuce is $5
*Gas, I know it’s expensive everywhere but $57 to fill my 13 gallon tank come on...
*Shopping if it’s your birthday, or if you’re having a baby or if I would normally buy you some sort of present forget it... i have nowhere to shop unless you like maadamia nuts and chocolate :)
*Shipping, its outrageous... and most stores will not ship to this island.
*Locals... no explanation needed I will remember the way they make/have made me feel

Aloha Koloa Landing Homeowner,

I hope this email finds you well. Here at Koloa Landing we are recovering from a restless night. With the Tsunami warning for all of Hawaii last night and this morning we wanted to let you know that everything is fine in Kauai. Hawaii's Civil Defense Program has an effective system in place for Natural Disasters that affect our islands, especially for hurricanes and tsunamis. Once the official warning was given, nearly all coastal areas and beaches were evacuated for safety and precaution. The resort guests staying here at Koloa Landing evacuated to designated safe spots in Koloa. In all it turned out to be a minor event with little impact. We are very pleased to report that there was no damage to the project and Poipu in general, and most important everyone here is safe!

ALOHA! We had such a fun January, it is really nice living in summer all year.
We rang in the New Year snorkeling and going to bed early... so in all actuality we didn’t ring in the New Year, but we did enjoy the sunshine.

We met some really cool new friends, had lots of good homemade dinners, went out to dinner, and went horse back riding!

We went to the big city Oahu, I was SO excited to do a little/lot of shopping, go to the USU BBall game, the Probowl, and not relax at all!

Notice that we do not have a lot of photos of this because my camera died... Andy dropped it in his drink :( and for some reason it was the only one we brought with us...

Christmas was a blast this year. I have never had the opportunity to be "Santa" how weird... it actually takes lots of planning; the shopping was the easy part... Setting up and organizing presents, no thanks! We had to wake Isabelle up around 8:30 because I was so excited I couldnt wait. Growing up my mom always woke me up and I swore I would never wake my children up.... It was worth it. Izzy is very low maintenance, she only wanted a Princess and the Frog book, black "chuck taylors" and zu zu pets... I believe between Santa and her Grandparents she was very pleased.

Mel and I are some die hard fans, Andy on the other hand cant quite figure out if he truly enjoys a good soccer match.. maybe someday he will admit to being a fan because he claims to enjoy the games. :)

* Utes were 13-0
* I skied over 25 days but not enough
* My job became extremely challenging
* I moved to SLC from Park City
* I went camping a lot
* I went rock climbing
* I had season tickets to the Salt Lake Bees & Raging Waters
* The Economy was/is horrible
* A new President was elected
* Michael Jackson died

September 3rd Utes football, I just need tell everyone how exciting Utah football is... I get chills thinking about it! The night was amazing the weather was perfect and of course the Utes dominated.

This is one of the things that happens when I leave to get ice cream at the bees game.. along with Mel getting hit on, a home run, and evil girl sightings... :)

U.S. vs El Salvador World Cup Qualifier a very high energy soccer game and my BF/Fav RSL player Beckerman even had a little playing time in the second half

Its a life I could lead for 10 months of the year the other two months I would prefer doing a little of this...

MLS All Star Game

I love my job most of the time... This week we were lucky enough to host the MLS all star teams All Stars vs Everton it was a very busy week for the resort but a lot of fun interacting with players, coaches, owners, MLS, media etc. The highlight of the week was the game Wednesday night we had some sweet seats, and later moved to The Canyons suite. I have a new respect for the game seriously the funnest group of people I have ever worked with.
